It’s not quite a pizza (tool light) and not quite a crepe (too heavy) – it’s a flammekeuche. This is the speciality of this restaurant that hails from Alsace.
A large rectangular, thin, dough base is topped with either sweet (fruits and sweets that you may find on a crepe) or savoury toppings (such as bacon strips, onion and crème fraîche) cooked quickly at a very high temperature.
Cut a square off, roll it and eat with a glass of local beer. It’s a hearty, yet cheap meal and no wonder a popular hangout for students in the evenings.
